I had a lot of fresh vegetables left over from Kelli's Bridal Shower so i decided to make soup with it. I ended up not following a recipe and just poured it all in a crock pot. I was worried to death how it would turn out because I honestly haven't made vegetable soup. I've made all varieties of soup but never with this many vegetables.
Here is what I did:
I had whole baby carrots, celery, tomatoes and red bell peppers left over from Kelli's shower. I kept the carrots whole and boiled them for 30 minutes until really tender. I diced half, kept some whole and then made a separate container for Hailey (dinners). i put it them in the crock pot with items listed above that I diced. I also added corn, great northern beans, peas, lima beans, green beans, diced potatoes, zucchini ( I think that is it!), two large things of chicken broth, a Knorr vegetable soup mix, salt, pepper, garlic powder and let it cook for 6 hours. After 4 1/2 hours, I was going stir crazy and decided to add a pound of smoked sausage and elbow pasta. It then continued to cook for two more hours. I still hadn't tasted it. I mean it looked good but I was just kind of throwing stuff in there. OMG when I finally did! It was great! Something so healthy, easy, light and kind of like a melting pot can make your day. My dad never eats at home and he had 3 bowls and I know when he gets back from the office, he'll have two more. It's nice having someone else's opinion besides mine and HG's.
Hailey had already had dinner tonight at a fundraiser for the Texarkana Warriors. I got her a fried chicken breast, fries and a roll from Chicken Express. You know me, I pulled off all the breading but she doesn't eat it any way. I was amazed at all the chicken she ate. Alijah was sitting across from her and she helped herself to his mashed potatoes as well. Poor Alijah but he was such a sweetie and let her have it. Cristi got him some more. She also told him she loved him when we were leaving. After she went around and gave hugs, I told her to say " We love you all" as we were walking out the door. She went over to Alijah and told him. Those mashed potatoes must have been REAL GOOD! :)
Tomorrow is blue day at school and they have so much planned. I wasn't going to take her but she would really enjoy it and she is napping for two hours up there so I will send her for a little bit. We have two blue outfits out, blue pony tails, a blue sippie, blue shoes and a blue jean jacket. Today was Dr. Seuss's birthday so she made an ADORABLE hat. I'll post pictures of that once I download my camera.
Oh and another note, I did grocery shopping today at the Walmart on the Texas side. I NEVER EVER go to that one because it is just terrible. I had to drop something off in Nash so I said what the heck, we'll go. They were clearancing out almost all of the women's and juniors tops, work out stuff and pants. While I don't really wear Walmart clothing, i racked up on a few shirts for $1 each, one for $3 and I thought I bought a work out jack for $2 but I can't find it. I'll check back later. I even went to the Ar Side Walmart to see if they had other sizes but they weren't marked down to a $1 yet. They were still $3. I know, $3 but still I'll wait. The tops are just cute T shirts but will be great with jeans and shorts for this summer. If they get messed up, so be it, they were only $1. If you all need any, email me and let me know what size and I'll go grab you some. They were too cute!!

Your soup sounds delicious. I am craving it now. I think I might make it for dinner!
