Okay, this blog is supposed to be ALL about Hailey Grace but we are going to start putting a few other things on here. Everyone knows I LOVE to cook and have a hidden talent for it. I keep my mouth shut and rarely let others know but from time to time, I dust off the old kitchen untensils and get to work.
So... I LOVE a mean Rueben. Probably close to my favorite sandwiches. They are terrible for you but oh so good. I came across this and it's a MUST! It's 11 pm on Tuesday night and I'm debating a trip to the 24 hour Walmart.
Hot Reuben Dip
Ingredients1 cup Swiss cheese, shredded or chopped, divided
1/2 pound corned beef, chopped
1 package cream cheese (8 ounces), at room temperature
1 cup sour cream
2 tablespoons ketchup
2 tablespoons spicy brown mustard
1/2 cup sauerkraut, drained
1 package of rye cocktail bread squares
PreparationPre-heat oven 350°F.
In a large mixing bowl, mix half of the Swiss cheese with all the ingredients except the bread squares.
Place the mixture into an ovenproof dish and sprinkle the top with remaining cheese. Heat in the oven until bubbly, about 20 minutes. Turn on the broiler and brown the top.
Serve the dip with the bread squares alongside.
My mom (Mia) came to stay with us tonight and we all had chicken and rice for dinner. Hailey had ham, pineapple and rice around 5 and then ate again with us. My little princess was starving! She has been alseep since 930 and we all know she isn't an early bird. I'm hoping that she won't wake at 4:30 wanting to play!
