I had some roma tomatoes about to go bad and I stuffed those plump beauties. It turned out pretty good and super easy. Great for a party. Might be great for Hailey's luau...maybe...
What you will need
5 Beefsteak tomatoes. I used roma toms
1 C flat leaves parsley leaves chopped
3/4 C Italian sytle bread crumbs (I'm sure any kind will work)
q/4 tsp freshly ground black pepper
1 tsp butter, softened
1 C grated provolone cheese
2 tbsp olive oil, extra virgin
Preheat oven to 375 degrees
Using a small spoon, gently hollow out the inside of the tomatoes. I used a grapefruit spoon. Discard the seeds and save the pulp. Do it slowly and carefully so that you don't hurt the outside shell of the tomato. Chop the pulp and add the parsely, bread crumbs, cheese, and pepper and mix gently. Gently toss the tomatoes in the extra virgin olive oil. I added more olive oil to coat the tomatoes. Fill the inside of the tomatoes with the bread crumb mixture. Drizzle the top of the tomatoes with the olive oil and bake until the tops are brown or about 20 minutes.
I found this recipe from the Food Network Channel today. Giada De Laurentiis was cooking up a storm this morning and I put the tomatoes into action instead of throwing them out.
