12 ounces beef stew meat
1 can chicken broth (yes, strange I know)
1-2 cups V8 juice
2 cup water
1 medium onion, cut into thin wedges
1 tablespoon Worcestershire sauce
1 instant beef bouillon cube
packet of knorr vegetable mix
black pepper ,salt
3 cups cubed potatoes
1 can corn
2 cup sliced fresh carrots
1 cup celery
frozen Lima beans (use about 3/4 package)
2 bell peppers dice (one orange and one red it what I used)
can of green beans or package of frozen
large can of diced (or whole) tomatoes
fresh okras (I think I used 1 C)
Brussels Sprouts (dice as many to your liking)
I think that was it. I just kept adding all the fresh items dad bought for the soup.
I boiled the stew meat in the water, beef cube and chicken broth. You can use the beef broth but I just used chicken broth since it isn't as strong of a flavor but more flavorful than water. While this was cooking, I diced all the vegetable and put them in a sprayed crock pot. Once the meat was completed, I poured it in the crock pot and seasoned with salt, pepper and Knorrs. We have the largest Crock Pot you can get at the store and it was almost over the top. I put this on high for an hour and then switched to low for 7 hours. YUMMY YUMMY YUMMY!!
You could really use any vegetables but I LOVE V8 in my vegetable soup!
